Breakfast Stir Fry
Prep Time: Approximately 5 minutes
Cook Time: Approximately 12 minutes
Serves: 2
Ingredients:
- 1/2 lb sweet or hot italian sausage, casing removed
- 1/4 cup red pepper, diced
- 1/4 cup yellow pepper, diced
- 1/4 cup onion, diced
- 1/4 carrots, diced
- 1/4 cup broccoli florets, chopped (I left mine kind of big)
- 2 eggs
- 1/2 tsp garlic powder
Instructions:
- In a large skillet, break up the sausage and brown with garlic powder.
- Add the peppers and onion and cook for 3 minutes.
- Add the carrots and broccoli and cook for another 2 minutes.
- Move the mixture to one side of the pan and add the eggs to the empty side.
- Scramble the eggs then mix it all together.
