This is one of my favorite treats to make when we have company! You can serve them with a meal or afterwards as a dessert. I usually double the recipe so that we have some leftover for breakfast. These will make you forget that you're eating Paleo but remember to enjoy in moderation! :)
Sweet Paleo Biscuits
Adapted from AgainstAllGrainPrep Time: Approximately 10 minutes
Cook Time: 15 minutes
Serves: 4
Ingredients:
- 1 1/2 tbsp coconut flour, plus 1 tbsp for dusting
- 1 3/4 cups almond flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup softened coconut oil
- 2 eggs
- 2 tbsp honey
- 2 tbsp almond milk (unsweetened)
Instructions:
- Preheat your oven to 350°F.
- Mix together dry ingredients and wet ingredients in separate bowls.
- Combine dry and wet ingredients thoroughly.
- Line a baking sheet with parchment paper and sprinkle it with a tsp of coconut flour.
- Divide the dough into 4 equal parts. Rub a little coconut flour on your hands, form the dough into balls and place on the parchment paper.
- Sprinkle the remaining coconut flour on top of the biscuits and place another sheet of parchment paper on top.
- Flatten the biscuits until they are about 1.5 inches thick.
- Bake for 15 minutes then serve with your favorite organic/homemade jam, honey or grass-fed butter!
